A ceramic knife is a type of knife that incorporates a super-hard, ultra-fine grain material. This material might be zirconium oxide, titanium carbide or diamond. Ceramic knives are harder than your typical stainless steel kitchen knives and can stay extremely sharp for much longer than metal blades.

Sharpen Techniques

Ceramic blades need to be sharpened differently than metal knives. Because the blades are so much harder than stainless steel, ceramic knives cannot be sharpened using steel or stone sharpeners. The blade will not hold its edge without proper maintenance and if you attempt to sharpen your knife on a hard surface like steel or stone, it may chip or break.

Ceramic knives need to be sharpened on a whetstone. A whetstone is a small block of stone, typically made from synthetic or natural materials. The whetstones are available in many sizes including some tailored for pocket knives and others made specifically for larger blades such as those used in ceramic knifes. Some whetstones have  two grits, coarse and fine. These will enable you to sharpen the blade as well as polish it for a smooth edge.

A ceramic knife can be sharpened using a whetstone much like a metal knife. However as mentioned above, ceramic knives cannot simply be sharpened on steal or stone because they will chip or break.

Circular Motion

The best way to sharpen your ceramic knife is by using a circular motion on the fine grit stone. You should place the heel of the blade at around ten o’clock on the whetstone, while holding it at about a forty-five degree angle. Gently pull towards you until the tip of the blade reaches five o’clock. Follow this pattern in a circular motion around the whetstone several times. You should finish by rinsing your ceramic knife off with water and wiping it down.

Ceramic knives are not stainless steel, which means they need to be cleaned properly after each use. The best way to clean your ceramic blade is to wipe it down with a damp cloth and mild soap after each use. Rinse and wipe the knife again to remove any excess soap and dry with a towel. If you have cooked anything acidic such as tomatoes, lemon juice or vinegar in your ceramic knife you will need to clean it much more thoroughly using warm water and dish detergent.

Uses

Ceramic knives are versatile kitchen tools that can be used for many different purposes. They should however only be used for their intended purpose as they will break if dropped or struck against other objects too hard. Ceramic knives are not designed to cut through bones, metal or thick-skinned melons.

Price

Ceramic knives come with an expensive price tag and are often seen as a luxury rather than a necessity. However they are great for people who are sick of their metal knives chipping or wearing down quickly, because ceramic knives will last much longer even with proper maintenance.

Ceramic blades are also easier to clean and maintain than metal knifes. They will not rust or corrode after years of use, and remove stuck on food easily.

In conclusion, ceramic knives are very sharp and long lasting kitchen tools that require special attention when being used, sharpened or maintained. Ceramic blades are stronger than metal knives but this makes them more brittle and susceptible to breaking if dropped onto hard surfaces.

They are however lighter in weight because there is no metal used in the blade. Ceramic knives should be kept separate from other knives as well as far away from magnetic knife strips to avoid chipping or breaking. Ceramic knives are an investment, but can last for decades if properly cared for.
